In this course, I'll refer back to the idea that we are what we eat. When we stop and think about the science of nutrition, we find this is literally true. Human beings are a very diverse species. But all humanbeings, young and old, male and female, of all cultures and ethnicities, have to eat. Specifically what, how, and why we eat may differ, but, at a microscopic level, the food we eat, is all made up, of chemical elements. Carbon, Hydrogen, Nitrogen, Calcium, Phosphorous, Sodium, all found right on the periodic table. So in a sense, food is chemistry, healing a bio-chemical organism. The foods we choose to eat may look different, taste different, provide different nutrients. And be more or less healthful, but whether animal or plant in origin, Our food is comprised, of tissues, cells, chemical compounds, and elements. These tissues, cells, chemical compounds, and elements, are broken down by our bodies metabolic processes, to be utilized in building new cells Tissues, synthesizing enzyme hormones, generating energy, or, maybe stored, or eliminated completely. During growth and development, as well as through adulthood, you need to eat to provide new metabolic resources. So next time you sit down to eat, or grab a bite running from a to b Think about how what you're eating, may become a piece of you. The quality of your food, will be reflected in your body, and the quality of your fuel, will impact how well your body functions. As this course continues, you'll learn just how differently your body may grow, develop, or function, depending on what you eat.
